When turning Notes off for over the air syncing with the iCloud account settings on the iPhone, you should be prompted to save the notes locally on the iPhone. Do this before deleting the account.
Are you referring to going into Settings>iCloud and sliding the slider next to notes?
When i delete my icloud account off of my iphone 4s, I am able to retain all of my data except "Notes." Apparently Notes are stored on the icloud in my current setup. Is it possible to copy or move my Notes to local storage on the iphone.
