Hey everyone why is it that when I update my apps in the App Store it is registered under a different Apple ID? And when I download brand new apps it is different Apple ID? Does this mean someone has hacked/tracked my phone?

Apps are permanently tied to the Apple ID used to download them. Your updates are for apps which you installed under a previous Apple ID, different from the ID you are now signed in with, and which will be associated with new apps.

You have to sign on using the appropriate ID depending on the app.

There is nothing to fix. To update an app you just need to be signed on (Settings > iTunes & App Store: Tap the Apple ID at the top of the screen to sign out and again to sign in) with the same ID you used to buy the app.
