After I edit photos in Photo Stream I try to save them to my Camera Roll and my ipad freezes up. Any ideas on how to fix this?

I don't think you can save a photo from Photo stream to Camera roll. So add a new album, then try adding the Photo Stream photo to the new album and it should also appear in Camera Roll.
