You do not reset the backup passcode. If you have forgotten the encryption passcode for your backup, you will have to restore the phone to remove it, and cannot use your backup to restore since it contains the passcode. See this.

In 2017 their should be a way to reset an encryption password, bloody ridiculous, iPhones can be tracked but when you want support they can’t help it’s funny if you hacked someone I bet they could find you!
