The email for iCloud will not let me change or sign out of it.

I just got my new iPhone 5S and it will not let me sign out of my old iCloud account. The email is grey and will only let me enter a password. How do I get rid of the grey locking thing so I can sign out and then sign in using my new account?

iPhone 5s, iOS 7.1.1
