Q: I recently upgraded my iPhone and gave old iPhone to son. My iPad now has his phone number on my iPad for imessaging - how do I change it back to my phone number

Well you have to sign out from iCloud under settings as well as go to Messages (under settings as well) and sign out from the imessage. then sign in into your sons account (if he doesn't have one, then create a new one) and you should be all set. Give this a try... Also under messages and "send & receive" you can see what numbers and emails are registered under the device for imessage.

Use a free gmail.com email address for your iMessage address.
