    Well, yes and no.

     

    Whenever you backup your iPad to your PC, the iTunes U data will likewise be backed up, so, "yes" to the "letter" of your question.

     

    However, I suspect the "spirit" of your question is "Can I copy the course to my PC and watch it / interact with it there?". Some courses can be viewed using iTunes for Windows, and some can't. As near as I can tell, "Collections" (as listed in the iTunes U section of the iTunes Store) can be viewed in iTunes for Mac / Win, but "Courses" only work on iPad.
