Thank you for your participation in the Apple Support Communities. I think the engineers and designers did a great job. You cannot downgrade and will not be able to install unauthorized and dangerous software on your iPad.

Personally I like the cleaner look of iOS 7. There is no way to remove the dock, there is no Apple supported means to roll back the iOS.

You cannot change it and there is no way to downgrade the iOS version.
Apple stops signing older iOS versions within only a few days of an initial relaese of a new iOS upgrade/update.
So, even if you jailbreak, you can't revert to a previous iOS as there will be no way to get the needed authorisation to do this.
