Using the latest version:
I added a bunch of photos to a blank document and somehow was able to add 4 pages, though at the end of the last page I want to create a new page though I can not figure out how, I press return and it does not go to the next page and make a new one. I'm not even sure how I created the 3 extra pages that I have.
How do you create additional blank pages in a document?

What version of Pages are you using?
Menu > Pages > About Pages

click your cursor at the end of your text and keep typing or > Menu > Insert > Pages Break/Section Break

Interesting, I tried both these techniques and neither worked.
Sure helps if you tell us a bit more than "neither worked".
We can't see what you are doing or the result. You have to tell us.
You possibly have the document body turned off in Document, which means it is working as a Layout template, where every page is individual.

It is a blank document that I dragged these screen grabs to. After dragging them onto the document I scaled them down and moved them.
At the very end of the last two images on the last page, I want to create a new page to add more screen grabs. I tried using the insert menu to add a new section break, page break, etc. though they seem to be greyed out. I try clicking after the last image and pressing return and nothing happens.
1.) UPDATE: Insert > Section does it, is this the correct way to add a new page?
2.) Where do I see how many pages I have?
