When I move things to trash and then check trash, I don't see them. Shouldn't I? Is there something I need to do to enable seeing what's been trashed?

They don't go to the system trash. They go to a trash folder in the library, which is dumped when the application closes.

Is there a way to see those files? I thought one could supposedly rescue them if so desired. Just curious as to what's possible.
You can retrieve them with undo. You could I supposed open the library bundle and dig them out, but the data base will probably be messed up then.
