I get long text that sometimes come in as one full bubble, sometimes come in in multiple bubbles and out of order and then today i received one that truncated the message with a "... >" I clicked on the ">" and it took me to the full message. How do i get all long messages to truncate like this. Can I set a limit to what I want to see before it requires me to click to read further?

Some of that is carrier dependent. An SMS (plain text) message not using iMessage is limited to 140 characters and longer messages may be broken into multiple SMS texts. However, per http://support.apple.com/kb/ht3529
Some carriers may automatically convert long SMS messages (ones that would require multiple SMS messages to send) into MMS format.
It's also going to depend on the type of phone your sending the message to/ receiving messages from. Older, non-smart phones can't handle messages longer than 160 characters. The messages to or from them will be broken up into chunks no longer than that. How the carrier handles that can vary as FoxFifth noted.

I'm not a twitter user -- and my memory isn't what it should be! 160 it is!
If it weren't for the ability to search for something online wherever I am and access to my Evernote archive, I wouldn't know much of anything anymore!
