I'm trying to use tables, but I'd like to delete the borders.

Changing table lines is very straightforward - you select the line(s), then in the Graphics Inspector palette you change the Stroke to whatever you want (including "none").

You can select table lines in several ways. If you first click within the table, then click within a table cell, the cells borders are selected. If you click within the table then move the cursor to one of the lines, you will see the cursor change to a double arrow separated by two lines. Click and the entire line will be selected. (You can also double-click on lines or cells in an unselected table to do the above.) Finally, you can select the table and then go to the Table Inspector palette, and use the Borders icons at the bottom right of the palette to select multiple lines.
