As you have found, if Photo Booth's tray contains one or more thumbnails, and if active recording is in progress when you press a keyboard arrow key, "The video just disapears... It doesn't even save!"
I know of no way to retrieve the unsaved recording. Your only option is to try to recreate the video.
In general, if there is any picture or video in Photo Booth's tray, pressing an arrow key while Photo Booth is the active (foreground) application:
• immediately terminates on-going video recording
• changes which image or video is selected in the Photo Booth tray
• displays the selected item.
The only way I know to prevent terminating Photo Booth video recording when an arrow is pressed is to delete all images and videos from the Photo Booth tray before starting a video recording. Before deleting them from the Photo Booth tray, be sure to export and save any images or videos you want to keep.
I know of no easy way to get them back into Photo Booth's tray (database) once they are deleted.
Photo Booth is a basic, "fun", application that makes quick snapshots and videos. For future serious video recording, consider using iMovie, QuickTime Pro, or QuickTimeX instead of Photo Booth
