I am in the UK, and the date format is the US format (ie month first) - I have changed my language in the Settings app, but no dice. In Chrome, Firefox etc there are language settings that I can change to alter the date format, but not for Safari ...

It's great that worked for you, but you should be able to have any primary language you want combined with any date format you want by just setting the latter in system prefs/language & region/region. Did Safari not do the right thing with the Region set to United Kingdom?

Just for future reference or for anyone else looking for answers here, there is no correct setting. If you navigate to System Preferences > Language & Region > Advanced > Dates you will see that you can change and customize the date settings to any format you choose independent of your language settings as Tom Gewecke stated.
I have now solved this - I needed to drag British English to the top of the list of languages 🙂
It then said I had changed my primary language and needed to restart, which worked. Boom!
Look for settings for Region Format in system preferences. Language is not relevant.
No - the Region had been set to United Kingdom for ages - it was only changing the language that worked.

That was all set up correctly too, but didn't help.
All is fine now though, since I changed teh language order.

Where were you seeing the wrong date format in Safari?
In a SaaS work management tool we are implementing. I wass using Chrome in the meantime as it was too confusing, but all good now 🙂
