I have two mail accounts on my iphone 4s, one is a Sky / Yahoo (UK) account. This has started to freeze up while the other is fine. I can unfreeze it by switching the iphone on and off. Is there something I can do so it stays unfrozen?
It might be my imagination but this is worse if the signal / wifi is weak, as if an email gets stuck halfway and stalls the account.

It sounds like you have a Mail account that is not functioning correctly until you restart the phone. I would remove the account from your Settings, and re add it with this article:

Delete the affected email account from your device.
- Tap Settings > Mail, Contacts, Calendars.
- Choose the affected email account, then tap Delete Account.
- Add your account again.
