Syncing contacts to an iPod classic is explained in this article -

Specifically -
Sync contacts and other info with iPod nano or iPod classic
- Connect your iPod to your computer and select your device.
- Select Sync, and then select options.
Your contact and calendar information is updated on your iPod each time you connect it to your computer. You can also update your information anytime your device is connected by choosing File > Sync iPod in iTunes.
If you have problems syncing, try syncing only certain information. For example, deselect the Sync checkboxes on the Music, Photos, Podcasts, and Video panes, and try syncing only Info.

I still don't think it is working.
As a test I deleted an address from contacts and resynched. There is no change on the iPod.

I have exactly the same.
When searching it looks like this feature is not available anymore.
A bit dissapointing.
I think this is not really an option ...
