If you initiated the screen share (ie, you are seeing the screen of a remote computer), just close the screen-sharing window to disconnect.
Or, if your screen is being shared, you will see an icon which looks like a double-rectangle in the menubar at the top right of the screen. Click it and click "Disconnect x.x.x.x" (which will be the IP address of the controlling computer).

While awaiting your (prompt) replies, I simply turned off both machines and restarted them. Fine. But now, I am trying to re-connect the screen-sharing so I can try your suggestions, and now I can't connect at all. Sooo, once I work that out, I will reply with appropriate checks and stars!

Choose Quit from the ScreenSharing menu.
If you have initiated "Full Screen" mode, an abomination ported from IOS, the land of tiny iPhone screens and one-at-a-time Applications, you will need to turn "Full Screen" off first to get your MenuBar back.
