I just want to fix this. It's stuck on the loading screen and appears to still be Jailbroken since the Apple logo is stll spinning around to turn into a skull.

The whole problem with jailbreaking is that once that has been performed, Apple do not know how the iPod will react to any given instructions. Why? Because the jailbreaker has changed what the iPod will do and how it will react.
It makes no difference that you didn't perform this action, the fact is that the iPod is no longer allowed to work in the way that Apple intended it to. This also means that Apple no longer know how to fix it either.
