My ipad iCloud has an old email address. How do I override the pop up window and enter the correct account info?

In settings Delete ICloud Account then put your correct Apple ID & Password
If that will not work then go to APPLEID Forgot password Apple.com

Ps your EMAIL AND PASSWORD HAVE TO MATCH WITH YOUR APPLE ACCOUNT FOR ICLOUD TO WORK

Wrong.

My Apple ID/email account can be 'johnny.appleseed at gmail.com'. My password for email can be 'Apple123'. My Apple ID password can be 'Orange456'. No issues at all.
