Just bought the exact same one as you, I immediately went to YouTube to see what 4k YouTube videos looked like. All I saw was 720p, I was weirded out, so I went on my girlfriend's pro, (without retina) and tried to find a video in 1080. I watched the GoPro With Lions video on her computer in 1080p and the exact same one at the same time as her. Side by side, my retina video looked better. I think it might have to do with safari recognizing the retina display and knowing it is higher resolution already?

Or.. It might be something with Safari? I will try downloading Chrome and post again later.

Sometimes the issue may be caused by your internet connection, there was this one time I was using a public internet connection and could not watch in HD. However when I used my own in-home private connection, I could view the same video in HD. If you are certain that it's not your internet connection that is causing this problem there are a few things you could do.
