Does iCloud keep various states or versions of a document in pages? I made changes on the iPad but they didn't sync to the Mac...when I opened the mac, the mac/pages version uploaded to iCloud and so I lost the most recent changes.
Basically, the iCloud/pages version (most recent) was overridden by the Mac/pages version.

Have you tried to upload the Pages file from your iPad once again? Maybe the iPad will override the Mac's version.
At this moment the iCloud Pages doesn't support the previous version option.
Maybe your Pages in Mac will see the previous document of your iPad in the menu of previous versions.
