Sound Quality of the Recordings of People I Interview

The sound quality of the recordings of people I interview is poor, even though the live sound is good. My sound is good, but the recording of their sound is bad. This is true regardless of the source (skype / Google / landline) and regardless of the fact that the live sound of them is good.
