Music in iPhone doesn't match music in iTunes?

I cannot figure out how to deal with this.

Here is what's happening:

Taylor Swift and Justin Bieber are playing on my phone. I bought this music in 2010 and did NOT ask it to transfer to my MacBook. They don't show up in my iTunes, but play on my iPhone. WHY?

This is also happening with 1 Dave Matthews song that I WANT to put in a playlist, but I can't because it doesn't show up in iTunes.

I have tried swiping to delete to no avail, I have tried showing songs in the cloud and hiding them, and I know you can make playlists on the phone, but I prefer not to.
