How to back up ipod shuffle music to itunes playlist

I want to copy the songs currently on my ipod shuffle to a playlist on itunes but I can't highlight, drag and drop or copy, etc. in order to create the playlist. I have all of these songs in my library but my goal is to create four playlists, one playlist for my workout music, one for my airplane travel music, one for mood music and a copy of my husbands ipod music (again all in my library). I want these playlists so when I want to change I can just clear the ipod and then drag and drop the playlist without having to choose each song to put on the ipod.
