Best way to switch from one iPod Classic to another?

Hi I have had a 120gb iPod Classic for years and I sync it to my login Profile/iTunes on my MacBook. Now I have a new 160gb iPod Classic and would like to do the following:

--Starting using the new iPod as the one that I sync to with my profile.

--Give the old one to my daughter or husband and have them start being able to put their stuff on my old iPod, using their own login(s). They could use either their own logins on my MacBook, or their logins on my husband's iMac. I'm running Lion and my husband has Mavericks.
