I just found an cheap MAV Mini 2006 with the latest version of Snow Leopard installed. Can this MAC Mini be upgraded with a newer OS X version? Which one?

If it's a Core Solo or Core Duo Mac, no.
If it's a Core 2 Duo Mac, Lion.

Thanks, so I'm stuck with Snow Leopard then. This is just a toy with my other iMac, MACBook Air and so on...
To be fair, you're not just stuck with Snow Leopard. It is a well regarded OS and if you have Apps loaded that rely on the Rosetta platform, you would lose them were you to upgrade to Lion (which Neil clearly says you can't).
