Is there a way to modify the pre-packaged styles for a particular document type or are you stuck with what they give you?
In iCloud Pages beta you can change the font but there is no option to create a new paragraph style.

Once you've created your paragraph style on your Mac, you can use your paragraph style on the web in the same document. This have to be set by each document again and again.
You could also make a template on your Mac, using Pages. When opening this document, the paragraph style will save your settings. When you saved this document to iCloud, the paragraph style can be used on the web.
At this point it isn't possible to edit the paragraph style on the web.
