What's wrong with pages or one of the dozens of other word processors?
I like using TextEdit like I used Simple Text, to write stuff down. I can't see using iCloud to write notes and collect my thoughts instead of paper... so to speak. I got my iPad as a gift... but it falls SSSSOOO short of giving me the experience I want I don't think I'll buy one. My MBP is a much better device for the bucks...
Well, I haven't looked at Pages or anything else but I will look around. However I think Apple is rather stupid not providing something simple and beloved like TextEdit on iOS. {;->
OK Pages is WAY to complex..... Not liking it as a replacement for TextEdit on to hunt...

Still have found nothing yet that equals TextEdit in its ease of use and compact size. I guess what I want is a touch screen, keyboarded lightweight laptop/tablet/computer. One of the windoze hardware devices does just that.
The windows product is a computer, their entry line albeit a very expensive entry line.
The iPad is part of the iOS family of devices and is in no way meant to be a computer. That would be the iPad Air.
I did a search for "Text Editor" here: http://appshopper.com/search/?search=Text+Editor and came up with over 1,000 of them.
I know the difference... BUT my iPad doesn't have enough computer features and my MBP doesn't have enough iPad features I want one device that gives me both sets of features I want the best of both in one device and if others can do it so can Apple if they would listen. NOW let us all (me too) get back to the original post I don't wish to continue the device thread here.

Back to your original post, send feedback to Apple. If you want a simple text editor do a search at the site I gave you. I'm sure you will find many that are equivalent or even better.
Personally I use Notational Velocity on the Mac. It syncs to Simple note on iOS.
It is not TextEdit or Simple Text but it is basically you, your words and a keyboard. It does support tagging if you need that.
Notational Velocity uses plain text & can save to a 'bunch of text files' so you can use other apps to edit the notes too. Simple Note is web based so you don't want to use it for confidential data.
