I am a writer and conduct telephone interviews, recording them with GarageBand. Is there some software, or a way to transfer the audio I record directly to text?

How about you play it back and let Siri on your iPhone try to do it. However, I'm afraid you would spend more time correcting the text, than transcribing it yourself.
There are plenty of apps out there that do that trick, just google "transcribe text from audio file"

Try dictation, as Edgar suggested, but on your Mac. Dictation on a Mac works quite well. Enable dictation in the System Preferences> Dictation&Speech panel.
Now you can convert any speech recorded by the internal Microphone to text, e.g., write it directly into a text document in TextEdit. In TextEdit use the command "Edit > Start Dictation fn fn"
All you need, would be to play your audio, so the internal microphone can catch it.

I don't think I have the "Dictation to Speech" setting in my MacBook (or I can't find it.) I went into Settings but could not locate it. Could it be my laptop is too old? It is a MacBook 7.1.

Maybe your MacOS X version is too old. Dictation has been introduced with MacOs X Mountain Lion, 10.8.

What is the last MacOS X version, that your MacBook supports? Could you upgrade to Mt. Lion?
