How do I plug iPhone into Macbook and see iPhone as a device? How do I backup stuff without using sync or iTunes? I want to grab one movie off my phone and put it on my desktop... I want to copy three songs to my documents folder... etc...

Use the Image Capture application.

Just copy them from iTunes to wherever....

You cannot do it out of the box, as this is not an iPhone feature. There might be some utilities that allow this. Try doing a Google search.
