I got my Iphone 5S two days ago and this morning I manually put in all my notes from my old phone. I checked and they were there. I then plugged my phone in to charge and suddenly poof, they are all gone. I didn't back up my phone so I can't do that route to get the notes back, but where would the notes have gone?? And is there any way to get them back??
Did you just plug into a charger, or did you plug into computer? How are you syncing your notes, with an email program, such as Gmail, Yahoo, etc? Do you have your device set to sync with iTunes via Wi-Fi?
I plugged it into the wall charger. Since the phone was a day old, I did not sync it nor did I back it up before putting my notes in it. I do not have my device set to sync with iTunes via Wi-Fi.

Was this old phone an iPhone?
You can simply restore the backup of old iPhone to the new iPhone to get everything on to it.
It was a brand new phone, straight from the package so I am not able to restore the backup as there is no backup to restore.

Yes, I understand you have a new phone.
That is why I asked if your old phone ("all my notes from my old phone") was an iPhone.
If your old phone was an iPhone, you can use the backup of that old iPhone to restore to the new iPhone.
On the new iPhone, did you have Settings > iCloud - Notes enabled?
Again, did you use an email provider to handle notes? If you go to your email accounts on the phone, does one of them have Notes set to sync?
