You cannot do that. If you update, you will get the latest version of iOS that your iPad can run.
If it's an original iPad, that version is 5.1.1.
Otherwise, it's currently iOS 7.1.2.
You can update using iTunes 11 on your computer. If your iPad is currently on iOS 6 or later, you can update over the air at Settings > General > Software Update.
