Try force quitting your mail app.  If you have iOS7, double tap the home button. You'll see the app icons and previews on the screen. Scroll sideways if needed to bring the mail app icon onto the screen and close it by flicking the preview window up and off the screen. Tap on the home screen preview or single tap the home button to exit the mode.

then re-open your mail app and try again.

If you see the app icons line up on the bottom of the screen, then you're running iOS6 or older. In that case, hold your finger down on the icon for the mail app until it starts to wiggle. Then tap on the white minus sign to force close the app. Single tap the home button to exit the mode.

If force quitting the app doesn't help, try resetting your iPad. Hold down the sleep and home keys for about 20 seconds. When you see the silver apple, let go and let it reboot.

If that doesn't help, go into the settings, mail, contacts and calendar and delete your accounts, then add them back. Sometimes when things get futzed up the best way to fix it is to start over.

Try this  - Reset the iPad by holding down on the Sleep and Home buttons at the same time for about 10-15 seconds until the Apple Logo appears - ignore the red slider - let go of the buttons. Or this - Delete the account in Mail and then set it up again. Settings->Mail, Contacts, Calendars -> Accounts   Tap on the Account, then on the red button that says Remove Account.
