How do you know the phone is using cellular data overnight? If it is based on the timestamp of entries on your carrier's web site that is not a good indication, because the timestamp on your cellular bill is the time accumulated usage was posted to your account in the billing system, not the time the data usage actually occurred.
The only way to be sure is to note the cellular usage before you go to bed at settings/cellular and again in the morning (you may want to take screen shots.). There may be a small amount of cellular data used, because some of the phone's functions only work on cellular data (visual voicemail, MMS messaging, network sync, etc), but this usage should only be a few kb. If it is more than that also note the amount of data used by each app at settings/cellular for help in troubleshooting.
