That's impossible as far as I know. Safari is the default browser and when you click on a link in an email, the website will always open in Safari. You cannot set another browser as the default. Maybe I am misinterpreting what you are saying and if so, I apologize. Or perhaps, you are talking about something else and if so, please elaborate.
I believe the OP is referring to the Yahoo Mail App, rather than the native Mail App. Yahoo opens links directly in the App's browser. Which sometimes has issues displaying websites correctly.
I have not found any way to change this though.
Perhaps using the native Mail App would work better.
With that said, I do like the themes the Yahoo App provides.

If the normal and expected behavior is for Safari to open when you tap on a link, are there any settings within the app that controls this? Phil is saying that he has never found a way to change the way that it works, but if you are saying that Safari used to open, there has to be some way to change it? 😕
Without knowing anything further, I will suggest what I always suggest when an app goes wonky ( that's a technical term 😁) and that is to close the app (the Yahoo mail app) and reset the iPad.
In order to close apps in iOS 7, you have to drag the app up from the multitasking display. Double tap the home button and you will see apps lined up going left to right across the screen. Swipe to get to the app that you want to close and then swipe "up" on the app preview thumbnail to close it.
Reset the iPad by holding down on the sleep and home buttons at the same time for about 10-15 seconds until the Apple Logo appears - ignore the red slider if it appears on the screen - let go of the buttons. Let the iPad start up.
I'm just trying to liven up the place a little bit and and let my brilliance shine in the discussion. 😁. It just isn't the same in the forum these days. I've adjusted just fine and I know my way around, have all of my bookmarks set, but the old fun just doesn't seem to be there any more.

You can open the link in the built in browser, and then tap on the share icon (box with an arrow coming out of it) Then tap on the Open in Safari icon.
However I have not found a way in the App's settings to change this directly.
