The closest way to do that is to take a screenshot. Keep in mind that you are going to have whatever is on the screen at the time so try your best to keep that to minimum. You can do that by tap and holding an app and them move to a part of the Home screen that does not have any apps and then take a screen shot of it. I know the articles say it is for iPhone, but will work on your iPod touch.
