The specific limitation is due to the original Pro's GPU capability, which can only be circumvented through "hacks" that go beyond the scope of this support site for a number of reasons - including violating Apple's OS X license agreements and this site's terms of use.

Yes, it's a 64 bit CPU... but the EFI isn't.
This seemingly insignificant distinction resulted in a lot of disappointed Mac Pro users.
Like everything else, you have to read the fine print.
