Question

I need to go from apple tv to a projector and large sound system through a sound board.

I have the video all hooked up with HDMI but the audio is going into the projector. It obviously sounds like it is coming from a tiny speaker inside the projector. I would like to send the audio signal 75 ft away to the sound board at the back of the room so I can use the sound system to project the audio.

Do I use a 75 ft digital optical audio cable to the board? Do I use a digital to RCA converter box?

I dont know if the TOSlink output from Apple TV can support 75 ft. You may need an optical repeater or an optical to AES3 converter or an optical to analog audio converter with a low impedance output.

Some projectors also have an audio line output if that is any closer to your mixer.

Finding TOSlink fibre optic cables longer than 25 ft is pretty hard. The TOSlink spec was intended for short runs, on the order of 5 metres (16').

Another solution would be wireless.
