i got my new iPhone 5 and i connected it to my iTunes on mac and it ask me if i want to setup as new iPhone or restore backup and i restore back up but now i want to delete backup and set up as new iPhone, is the anyhow?
Go to Settings>General>Reset>Erase all Content and Settings. Then setup the setup as new option.

will it delete everything on my phone? because when i restore my iPhone as backup on iTunes on mac, everything on my old device got into my iPhone 5 even the wallpapers and everything but I don't want to delete things on my iPhone before i backup on iTunes and got everything of my old device on my iPhone 5

Yes, it erases the iPhone like the it says "erase all content and settings"
If you do not want to erase then do not erase it/set it up as new.
You can't restore only selected items from a backup.
so i can't actually restore only the things that got backup on iTunes with my old device?
Nope, restoring from backup is all or none.
Why not just delete the unwanted stuff?

does iCloud contains everything i backup on iTunes? what happens if i restore from iCloud backup?
The iCloud backup includes most things except non-iTunes purchased but the iTunes backup does not include those either. For what iCloud includes see:
