An iPhone does NOT store contacts or anything on a sim card - it is not possible to do it on any iPhone, which is why you sync with iTunes instead.
If you want the ability to store your contacts on a sim card, then go out a buy an android phone instead, but you CANNOT do it on an iPhone.
