Thanks for using Apple Support Communities.
First, check out the Display preferences in the System Preferences to make sure the option to show AirPlay in the menu bar is available.
You can also turn Airplay on in System Preferences > Displays:
Note: If you don't see AirPlay Display or AirPlay Mirroring options in the Displays pane of System Preferences, then your Mac model does not support this feature.
To turn off AirPlay, select "Turn Off AirPlay" in the AirPlay menu or from the Displays pane of System Preferences. You can also press the Menu button on the Apple TV remote to end the current AirPlay session.About AirPlay Mirroring in OS X

If the option is enabled, and you're still not able to use AirPlay mirroring, then follow the troubleshooting in the article. Note, that even though it says for iOS, the same network or firewall settings do apply to your Mac.
