Yes, by having it password locked when you are not using it.

No, you can't stop him/her viewing and/or deleting them in the Photos app - only the actual Camera app can be hidden, not the photos.
There are some third-party photo apps which allow you to copy your photos into them from Photos, and which can have a passcode lock set to restrict access to them e.g. Photo Manager Pro has a passcode lock within it - so you could copy your photos into a third-party app (and preferably to your computer so that you have a backup copy : copying photos) and then delete them from Photos.
If you want to let your child use your device, use Guided Access.
