I am considering putting two SSD drives in my Mac mini. I am running the base OSX OS not the server edition. It looks like I should be able to do this same thing without the server edition software unless I am missing something. I just wanted to verify before investing the time money and effort.

Unfortunately the 2012 and newer mac minis only have room for one 2.5'' sata hard disk or ssd. My advice would be to get the largest ssd you can and partition it.
The later Mac Minis do allow installing a total of 2 2 .5 inch drives. Yo need special port to install the second drive. You can get the parts here:

Thanks for that information. I saved that link so that just leaves the original question of would this same process work with two HD's installed on a standard Mac Mini?
The recent Mac Minis can use two, 2.5-inch drives. You need a parts besides the drive to install the second HD. If the Mini came with an optical drive, there are kits that remove the optical drive and allow installation of a second drive.
Server or non-server OS does not make a difference
