You may be able to get a better idea of actual display difference, and compare graphics
capabilities, by looking at models in person at a retail location; though there may be a
small chance of later hardware spec changes as time goes on in any product, that is
probably the best way to tell.
Could be you may fall in love with a larger display; however the upgrade to more RAM
is something the dealer or built-to-order would be needed. GPU performance for game
and other use, video editing, etc, may be a place to look.
You can read the Apple Store online spec pages to see about the hardware spec for
graphic processor, dedicated graphic memory, and other information. Also note that
some software may not find benefit from quad-core processing; so that area is gray
and an unknown, unless you are seeking some software or hardware gain from there.
Either device could see an upgrade in RAM, since 8GB could seem like alot, until
you are multiple tasking. Also larger capacity storage (HDD or SSD) plus suitable
backup devices, and a TimeMachine (with wireless base station?) may be an idea.
So to compare specs in addition to the jobs you may seek to have each of these perform
may be one way to help determine the one to buy, at present. If you are considering to
keep the Mini, that could be capable of home and desktop duties with a few upgrades in
RAM and perhaps a larger HDD. The new iMac and MacBook/Pro should both ship with
Mavericks and also be ready for the next great thing. But check when buying to be sure.
Good luck & happy computing! 🙂
