I had this problem since I upgraded to ios8, but I haven't seen any other posts except yours. When I click on first name in contacts, it jumps down to last name, etc. It's quite annoying.. 😉
Have you tried resetting your phone? I was planning on doing that this weekend..

I have the same issue. Can't edit the "company" field because the cursor insists on immediately moving me down to the phone number the moment I move it to the company section.
It looks like the problem is a bug related to iOS 8.1 and 3rd party keyboards. If you use the original Apple keyboard, it works just fine. Apparently Apple is working on a fix for this bug..

Kylemcgee has the correct answer. I have Swiftkey installed (Iphone 6 Plus IOS 8.2) and get lots of glitches entering data into forms on some apps, system apps (such as contacts) and web browsers. Switching back to the default IOS keyboard fixes the problem immediately.
Its annoying but at least you can easily overcome this bug.

I have this exact same issue, still on iOS v7.1.2 (iPhone 5S), and I've had the issue for 6 months to a year. I do not have, nor have I ever had, Swiftkey or any third party keyboard.
I plan to erase my phone and do a clean iOS 8.? install in the next few weeks so I'll post my result.
Good point hsurferman. I believe you cannot even install third party keyboards on any IOS prior to 8.0 - so another IOS bug to add to the list.
I can guess how Apple CS would respond to this if raised as a complaint - "perform factory reset and upgrade to the latest available version of IOS for your device through iTunes."
