I just ordered a 6+ from Verizon and they have their own monthly insurance. Is it possible to register the new phone for AppleCare and skip the Verizon charge? Is there a benefit one way or the other? Thanks

Yes, you can buy AppleCare within 60 days of your iPhone purchase. I think that's because you already have an Apple warranty for 90 days anyway. See Can I buy an AppleCare plan for my device? - Apple Support for details
It doesn't matter. AppleCare lasts 2 years from the purchase of your device, not from the date you purchase AppleCare, so the earlier the better.
