PC3 Mean

I am planning to upgrade my memory to 32gb on my early 2009 version Mac Pro desk top computer with 2 x 2.93 GHz Quad-Core Intel Xeon processors. When I look up memory for my computer. I keep seeing PC3 - 8500, PC3 -12800. What does that PC3 mean and which one of the memory should I get?
