I use the Merge cells function quite a lot and it's rather inconvenient to choose it from the Table menu all the time. If you know a way how to add it to the Toolbar as an icon, please share it.

You can create a keyboard shortcut for the menu item Table/Merge so you don't have to keep clicking up on the menu to apply it. You do this in the Keyboard section of System Preferences.
Don't see that in the choices when you go to View > Customize Toolbar...
I personally think it is a good idea that Apple left it out of the Toolbar. Merging cells generally is not a good idea. It wreaks havoc in all kinds of subtle ways, including mysterious problems with sorting.
In almost all situations it is easy to achieve the same visual effect in other ways, such as turning word wrap off for the relevant cells, or inserting a Text Box.
