From a backup hard drive, I have copied my Windows Mail emails onto my iMac desktop. However when I try to open any of the emails, I get a dialog box stating that there is no application set to open the document. How do I read my old emails and then add them to my Apple Mail program?

What file type are the emails? You most likely will have to convert the file to a format that Mail can read.
The easiest option to transfer your emails is to upload via IMAP. When you add the IMAP account to Mail all the messages will download.
If they are .pst files you can import into Microsoft Outlook.
They are ".dbx" files from Outlook Express that I used on my Windows XP computer. I am new to Apple computers for only a few months. If possible, could you be more descriptive in your explanation? I don't know the specifics of uploading emails via IMAP. Thank You for your help.

Outlook Express and Outlook are different programs, with different file formats. Be sure to check the correct one. .dbx is Outlook Express. (Outlook uses .pst or .ost)
If you no longer have access to a PC then you will have to use a converter like EmailChemy. It has a demo so you can check it out first before buying.
If you do have access to a PC then you can add an IMAP account like iCloud or Gmail and move the messages to folders on the IMAP account
