We have the I photos app and due to the ios8 upgrade we have lost our entire project. We have the photos but no order or journal. Will I photos update to be compatible with ios8 or is there a way to get rid of the update off my I pad so it will work again.

There is no announcement by Apple about future extensions of Photos. Let Apple know, what the features are that the users want by using this form:
Right now, books and journals are not supported: Migrating from iPhoto for iOS to Photos on iOS 8
You can still make beautiful books in iPhoto on a mac, however.
iPhoto in iOS will only work with iOS 7.
